Cheo van is a sweet and sour sauce that accompanies spring rolls or khao poun nam phong. This sauce is also eaten with most phan.
Ingredients
50 g of sugar
1 clove garlic, crushed
2 tablespoons of lemon juice
2 tablespoons of fish sauce
2 chili peppers, chopped (optional)
4 tablespoons unsalted peanuts, crushed
Method
In a small saucepan, dissolve the sugar in 250 ml of water and bring to a boil. Let simmer for 5 minutes then remove from heat. Let it cool for a few minutes.
Add garlic, lemon juice and fish sauce and mix.
Add the chili peppers and peanuts just before serving.
"Some people replace lemon juice with tamarind paste, typically to accompany fish. Dilute 1 teaspoon of tamarind paste in the boiling sauce."
